Nowadays, all it takes to make jelly food is to open up a pack of gelatin and mix it with boiling water. It is not rocket science. However, colonists had other methods to get this texture for their meals during colonial times. One of which included the noses of mooses.
Moose is a native species of North America, so it is no surprise that people used them in the eighteenth century to prepare foods. But taking the nose to make jelly seems like a bit much. This meal is originally savory, and it was made by boiling the upper jaw of this animal.
