This turtle soup does not look as bad as it sounds
As you probably already know, there are a lot of endangered species of turtles. But back in the eighteenth century, there was no such thing as protected species, so they used almost every animal they knew in their kitchens. Turtle soup, for example, was a very common dish among the upper classes of the colonies.
Nowadays, it would be much more difficult to prepare this dish for obvious ethical reasons. But back in the day, people used snapping turtles to prepare this meal. And it was not until the early twentieth century that turtle soup stopped being as popular as it was during colonial times.
