The seventeenth and eighteenth centuries were nothing like these modern days. People would not waste any part of the animals they killed for food. So, in order to use as much as possible, they came up with this meal. If you are a bit squeamish, you might want to skip this one.
After using the lamb and pig meat, they would take the scraps and make scrapple. It looks like a meatloaf, but it is made from the ground up leftovers like the snout, heart, brain, or eyes. It sounds disgusting, but we cannot judge people from three hundred years ago.
