Hunting was a more frequent practice during colonial times. Back then, people did not have the same restrictions as we do now. Today, many species are protected, and hunting is only allowed in some delimited areas. But in the eighteenth century, game birds like the partridge were hunted and eaten.
The partridge is a non-migratory bird originally from Europe, Asia, and Africa. It is part of the Phasianidae family, like the quail, the pheasant, and the grouse. In fact, many people tend to confuse them. But this one is larger than quails and has stronger bills and feet. Its meat is supposed to be more flavorful than pheasant and with a sweet aftertaste.
