Humble pie was a clever way to use leftover meat
Lower-class Americans and enslaved people had an awful time getting food in the colonial period. That is why they had to come up with inventive ways to make plentiful food for themselves and their families. This next dish is a great example. It is called humble pie, also known as umble pie.
This pie was essentially made from whatever was left of an animal (in general, the organs). People mixed these leftovers with apples, sugar, and spices to make something filling. Sadly, as the upper class could pay for the animal’s meat, the peasants would get the rest for their humble pies.
