The official national cookie of New Mexico is Bizcochito, which was invented with the help of the original Spanish settlers in New Mexico as a means of using food to convey local culture, traditions, and tastes. Bizcochito is a buttery or lard-based cookie containing sugar, milk, and flour. It also includes spices such as cinnamon and anise, as well as baking powder.
When immigrants started to arrive in New Mexico, they brought with them their own cookie recipes, but the Bizcochito has withstood the test of time. Today, there are only two types of Bizcochito produced in New Mexico’s southern and northern regions. This confection can be enjoyed alone, as a dessert, or dunked in tea.
