Anzac Biscuits – Australia and New Zealand
Rolled oats, flour, sugar, butter (or margarine), golden syrup, baking soda, boiling water, and (optionally) desiccated coconut are the ingredients used to make the sweet Anzac cookie, which is a favorite in Australia and New Zealand. The first known recipe combining the words “anzac” and “biscuit” in a cookbook was found in 1916 for a confection named the “Anzac Ginger Biscuits,” which was published in the Perth edition of The Sunday Times. However, this recipe has a lot of differences from today’s recipes for Anzac Biscuits.
The Australian and New Zealand Army Corps (ANZAC), which was founded during World War I, has long been linked to Anzac biscuits because wives and women’s organizations give biscuits to soldiers serving overseas. These cookies were preferred because their ingredients stay fresh for longer periods of time and withstand naval transportation.
