Strawberry Shortcake Cookies – United States
According to American terms, shortcakes typically refer to a sweet cake or flaky biscuit; hence, strawberry shortcake is a crumbly or crispy confection in which fats like bird and lard have been incorporated. The first recorded mention of Strawberry Shortcake Cookies can be traced as far as 1588 in the English cookbook called The Good Huswifes Handmaid for Cookerie in her Kitchen (London, 1588).
There, it was described as a cookie or biscuit in the English sense, made of flour, cream, sugar, egg yolk, and spices. Today, Strawberry Shortcake Cookies are made of butter, milk or cream, flour, sugar, baking powder or soda, salt, and occasionally eggs. However, the butter is incorporated into the dry ingredients after the mixture has been combined until it resembles cornmeal.
